What is demineralised whey powder?
Demineralised whey powder is a product obtained during the cheese making process. It is obtained through a demineralisation process to remove mineral salts from the cheese, mild pasteurisation and spray-drying. Whey provides a higher nutritional value and improves the texture of the food products to which it is applied. In addition, it contributes to the goal of sustainability by making water reuse feasible.
Nutritional value
Demineralised whey powder is high-added-value food product, with protein to dry mass values above 11% and ash content below 5%. These proportions improve its nutritional and functional level, as it has a lower ash content and a higher level of protein and lactose. It is a fine, homogeneous cream-coloured powder. Characteristic dairy flavour and aroma.
